Kob is a delicious South African classic, especially the smaller ones, but unfortunately, it has been fished onto the Red List in the wild. Thanks to innovative aquaculture here in South Africa we are able to offer this species again guilt-free.
The flesh is succulent and firm, forming large flakes, and there are few bones. It has no definite flavour, Small kob or ‘milk-kob’ such as ours have a more tender, sweeter flavour.
Our Dusty Kob is the only sustainably sourced Kob species available on the South African market as they are farmed in ponds mimicking their natural habitat as closely as possible. The farm produced and sold only 60 tonnes of Dusky Kob in 2018/9.
