John (Cape) Dory also known as St Peters fish is a delicate white firm fish normally exclusively sold in Europe. It is considered a high-end species enjoyed by many Chefs across Europe for its versatility. These fish are caught at a depth between 140m to 400m on the West Coast. They are cut to our spec and have their skin on to retain flavour when cooking.
John Dory is a delicious fish with delicate white flesh and a firm, flaky texture. A saltwater species, it has a mild, slightly sweet flavour, and can be served sautéed, baked, steamed, poached, or even coated in breadcrumbs and fried.
