Our cold water, spiny lobster is known as South Coast Lobster, this South African Lobster is a deepwater species and is critically the only sustainable lobster species in South Africa. This species of lobster is very difficult to get our hands on, as its usually exclusively exported due to its superior taste and it being the only species of South African lobster that is on the SASSI green list.
When cooking lobster, you want the centre of the meat to still be slightly opaque and underdone. Avoid using lavish sauces and stay away from being too heavy-handed on the garlic, lemon and chilli.
