Our Trout comes from a local farm from the Katse Dam in Lesotho. The trout grow for roughly a year before harvesting. The trout is then blast frozen and brought down to Cape Town where we process accordingly. Trout is known for its reddish orange flesh with little fat lines unlike the better known Norwegian Salmon. Order a trout side fillet, delivered straight to your door.
It’s hard to go wrong with such a tasty piece of fish! The only thing you need to ensure is that the fish is not overcooked otherwise it will dry out due to the lack of fat. Many people view this species as a leaner alternative to Norwegian Salmon (High in good fats and Oils). We recommend patt drying to remove the moisture and then grilling in the oven or pan frying skin side down of course!
Rainbow trout are farmed on land in RAS tanks, which are customized tanks for rainbow trout (Recirculating Aquaculture Systems). This is a recirculating system, meaning it is either completely or partially closed to the ocean. Juveniles are developed in a hatchery using locally sourced materials. Rainbow trout eat a low-moderate quantity of protein-based and terrestrial-based food.
Lesotho uses cage culture to raise rainbow trout. South African hatchery imports the juveniles. Rainbow trout just need a amounts of food. Normally, cages have a large waste outflow, however the farms are located in the Katse Dam, a man-made reservoir with a high flushing factor.
