This is a great recipe for summer entertaining. The orange and lemon add a bright burst of fresh citrus flavor, topped with the soy sauce you get a delicious myriad of flavors.

Ingredients
Citrus Glaze
- 1 cup fresh orange juice
- 1/4 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 1/4 cup chicken stock
- 1 garlic clove, crushed
- 2 tbs. soy sauce
- 1 tbs. rice wine vinegar
- 1 tbs. brown sugar
- 1 tsp. butter
- Salt and black pepper
Grilled Salmon
Short Instructions
Step 1: Glaze
Place all ingredients into a medium saucepan and bring to the boil over a medium heat. Stir frequently to prevent burning and infuse the flavours.
Step 2
Reduce the heat to a simmer and let the glaze reduce until syrupy, this should take about 10 – 15 min. Add salt and pepper to your taste.
Step 3: Salmon
Heat a grill to medium-high heat until grill is hot. Brush both sides of the Salmon fillets with olive oil just before grilling, then season with salt and pepper, to taste. Grill the salmon for about 4 – 5 min per side, brushing with the glaze during the final few minutes of cooking frequently.
Step 4
Transfer the Salmon to a plate and brush them with the remaining glaze before serving. Enjoy!
