Baked Salmon in Foil

Nothing is simpler and tastier than this salmon fillet in foil. Dressed with Onion, herbs and tomato, it produces a rich Mediterranean tasting dish which is sure to delight your guests and family.

Ingredients
- 1 onion, chopped
Short Instructions:
Step 1
Preheat the oven to 200 degrees celsius. Cover Salmon fillets with 2 teaspoons olive oil, salt, and pepper.
Step 2
Stir the tomatoes, chopped onion, 2 tablespoons of oil, fresh lemon juice, oregano, thyme, salt and pepper in a bowl to infuse the flavours.
Step 3
Place a Salmon fillet, oiled side down, on a sheet of foil. Wrap the two ends of the foil in a spiral formation. Spoon the tomato mixture over the Salmon. Fold the sides of the foil over the Salmon and tomato mixture until the foil is closed like a bag.
Step 4
Place the foil packet on a large baking tray. Repeat until all of the salmon have been individually wrapped in foil and placed on the baking tray.
Step 5
Bake for 20 - 25 min. Once cooked, open the tops of the foil packets and place on a plate whilst still hot. Enjoy!
