The -60ºC loins are received by our supplier and processed using one of two specialist machines in South Africa to remove any bloodlines and bones whilst never allowing the tuna to drop below its original -60ºC temperature leaving you with the very cleanest and best pieces of the fish. The Tuna remains at -60ºC in our sushi freezer until we deliver them in our disposable cooler boxes. Best served as sashimi.

Cooking
These tuna portions are perfect for sashimi. With a sharp knife, thinly slice the tuna and serve with soy sauce and kewpie mayonnaise.
A fast and delicious method to cook your tuna is to seer it with sesame seeds. Thaw the tuna and coat it in soya sauce. Roll your fillet of tuna in sesame seeds with a seasoning of your choice. On a HOT pan, sear the tuna for 45-60 seconds a side.

Sustainability
Our Yellowfin Tuna is caught in the South East Atlantic, which are migratory fish that live for a long time and are commonly seen in mixed schools with other tuna species in open oceans. Prized for sashimi, it is frequently offered in restaurants.
Pole fishing or polling are used to catch our yellowfin tuna. Rigid poles (2-3 meters) are tied to a feathered jig with a barbless hook attached by a small amount of line in this form of fishing. Pole and line fishing is a very selective form of fishing with low bycatch and discard rates and no detrimental influence on benthic ecology or the environment.
