Our Yellowtail Amberjack is caught locally on a long line, which is then blast frozen to retain quality. Yellowtail has pale pink flesh with firm, large flakes and a sweet flavour – this fish is known for its delicious fatty meat, which can even be served raw as sushi. Cooking
Defrost before cooking.
Once defrosted, pat dry to remove excess moisture. This fish contains high amounts of fat, which is why this fish is a popular eating fish.
We suggest cooking these portions skin down by pan frying, oven baking or commonly on the braai. Yellowtail fillet portions grill particularly well. On a cooking tray cover your portion with butter, lemon, spices and fresh herbs of your choice.
Grill the portion for about 8 minutes until the flesh is flakey, white and buttery. Alternatively, pan fry skin side down on a medium high heat for 3-4min on the skin side, then flip and finish for another 3min
