Cooking

We recommend either pan frying or grilling your kingklip is the best way to prepare it. Ensure that the kingklip is defrosted before cooking.

Pan fry:

Place in a pan on medium/high heat with a drizzle of olive oil.
Pan fry for 10-15 minutes whilst regularly flipping the portions.
feel free to add garlic cloves and a table spoon of butter for extra flavour.
remove the portions from the pan as they start to turn translucent to white as they will continue to cook for a short while once out the pan.

Oven-grill:

Lay your kingklip on a cooking tray with a few knobs of butter, garlic and a seasoning of your choice.
Turn your oven onto the grill function at 180C and cook your kingklip portion for 8-10 minutes until the texture becomes white and flakey.

Sustainability

Kingklip tend to be found in deep rocky, sea-shelf environments. They are a very popular eating fish amongst South Africans. Our Kingklip is mainly caught at the Agulhas Bank off the South Coast.

The fishing method of choice is fishing line or “Hake demersal longline” that is set on the seabed with baited hooks around 1.5 meters apart. The lines can stretch over 10 kilometers.

East Coast Soles.

Best I’ve eaten in years.Thought I was back in Pe. Thawed out overnight in fridge.Salt & Pepper,lightly dusted in flour,heat a little olive oil & butter on med/high until butter starts foaming. Add your soles & fry for approx 4mins on 1 side & flip onto other side for approx 2 mins. Timing varies depending on size of the sole.After removing soles from hot pan add a further few extra nobs of butter & freshly squeezed lemon juice to taste. You’ll find this very hard to beat anyware.
