These cold water, spiny lobster species are commonly known as South Coast Lobster or South African Lobster. When cooking lobster, you want the centre of the meat to still be slightly opaque and underdone. Avoid using lavish sauces and stay away from being too heavy handed on the garlic, lemon and chilli.
